Ingredients:
6–8 lb boneless pork shoulder (also known as pork butt)
2 tablespoons yellow mustard
3–4 tablespoons steak seasoning or preferred pork rub
1 cup beer or apple juice
½ cup barbecue sauce, divided
2 cups coleslaw (store-bought or homemade)
12 Hawaiian sweet rolls
Pickles (optional)
Directions:
Preheat your smoker to 225°F (107°C).
Rub the pork shoulder all over with yellow mustard, then generously apply the steak seasoning or pork rub.
Place the pork shoulder fat side down in the smoker and smoke for 3 hours without opening the lid.
After 3 hours, increase the smoker temperature to 275°F (135°C).
Transfer the pork to a disposable aluminum pan, fat side down. Add the beer or apple juice and drizzle with ¼ cup of barbecue sauce. Cover tightly with aluminum foil.
Return the pan to the smoker and cook for an additional 3–5 hours, or until the pork is tender and easily shreds.
Remove the pork from the smoker and let it rest for 20–30 minutes.
Shred the pork using two forks or your hands, discarding any large pieces of fat.
Toss the shredded pork with the remaining ¼ cup of barbecue sauce.
Slice the Hawaiian rolls and assemble the sliders by placing a generous amount of pulled pork on the bottom half of each roll.
Top with coleslaw and pickles, if desired. Place the top half of the roll on top to complete the slider.
Serve immediately and enjoy!
