Big Mac Sauce
½ cup mayonnaise
2 Tbsp French dressing (or mayonnaise + ketchup alternative)
1 Tbsp dill pickle relish
1 Tbsp minced onion or 1 tsp onion powder
1½ tsp granulated sugar
1 tsp white vinegar
1 clove garlic, minced

1 lb (450 g) ground beef (80/20 or up to 15% fat)
Salt & pepper (or steak seasoning)
8 small flour tortillas (6–8 in)
Vegetable oil for cooking
8 slices American cheese
~¼ cup finely diced onion
½ cup shredded iceberg lettuce

Make the sauce: Whisk together all Big Mac sauce ingredients in a small bowl. Set aside.
Prep beef: Divide ground beef into 8 equal balls (~2 oz each), season with salt and pepper. Set tortillas out.
Heat skillet: Preheat a cast-iron or heavy skillet over high heat; add a little oil.
Smash & cook: Place each beef ball (beef side down) on a tortilla in the hot pan. Use a heavy spatula or bottom of a pan to press (smash) until the beef covers the tortilla. Cook 2–3 minutes or until crisp.
Flip & melt cheese: Flip taco so tortilla crisps on the other side, add a slice of American cheese on the beef, then cover with a lid for ~30 seconds to melt cheese but avoid burning tortilla.
