Ingredients
2 Tbsp butter
1 yellow onion, diced
10 cloves garlic, minced
1 lb carrots (about 4–5), peeled & diced
2 large russet potatoes, peeled & diced
32 oz vegetable broth
2 cups finely diced broccoli florets
8 oz sharp cheddar cheese, freshly grated
2 cups milk
2 Tbsp all-purpose flour
Salt, to taste
In a large pot, melt the butter over medium–low heat. Add onion and garlic; cook 7–10 min until softened and translucent.
Add carrots; cook another 5 min over medium heat.
Stir in potatoes and vegetable broth. Bring to a boil, then simmer until potatoes are fork-tender (about 10–15 min).
Whisk together milk and flour; stir into soup.
Add finely diced broccoli; simmer 10–15 min until broccoli is tender.
Stir in freshly grated cheddar until fully melted and soup thickens.
Season with salt to taste—serve hot with crusty bread or rolls.
