1½ lb ground pork
⅓ cup packed light brown sugar
3 tbsp lime juice

Fine sea salt & freshly ground black pepper
Toppings
Prepare the coconut rice: Cook jasmine rice with coconut milk, salt, and sugar according to package or recipe instructions; set aside.
Sauté aromatics: In a large skillet over high heat, warm olive oil. Add white parts of scallions, garlic, and ginger; cook 1–2 minutes until fragrant.
Cook pork: Add ground pork, breaking it up with a wooden spoon, and cook until no longer pink.
Add sauce: Stir in brown sugar, lime juice, and sriracha. Let pork sit undisturbed for about 2 minutes to caramelize, then stir and let caramelize again for another 1–2 minutes.
Season: Taste and adjust seasoning with salt, pepper, or more sriracha as desired.
Serve: Spoon caramelized pork over coconut rice. Top with chopped peanuts, green scallion parts, lime wedges, and fresh herbs.
