1 cup fresh blackberries
1 tbsp balsamic vinegar
~4 oz brie cheese, thinly sliced
2 tbsp butter, softened
Pinch of salt
In a small saucepan over medium heat, combine blackberries, balsamic vinegar, honey, and a pinch of salt. Stir and mash occasionally until the berries break down and the mixture thickens, about 5 minutes. Set aside to cool slightly.
Preheat a non-stick skillet or cast iron pan over medium-low heat.
Butter one side of each bread slice generously.
Place two slices buttered-side down in the skillet. Top each with sliced brie, a spoonful of the cooled blackberry mixture, then more brie.
Cook 2–3 minutes per side, pressing gently with a spatula, until the bread is golden brown and crispy and the cheese has melted
Remove from heat, allow to rest for a minute, then slice diagonally and serve warm.
