For the Bars:
½ cup (113 g) unsalted butter, melted and slightly cooled
1 cup (95 g) old-fashioned rolled oats
1 cup plus 2 tablespoons (140 g) all-purpose flour, spooned and leveled
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon salt
½ cup (100 g) granulated sugar
½ cup (100 g) light brown sugar, packed
1 large egg, room temperature
1 teaspoon vanilla extract
1 tablespoon molasses
For the Vanilla Icing:
½ cup (60 g) powdered sugar, sifted
1 to 2 tablespoons whole milk
¼ teaspoon vanilla extract
Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper and set aside.
Pulse the old-fashioned oats in a food processor until they are a mixture of fine crumbs and larger bits. Set aside.
In a medium bowl, whisk together the melted butter and both sugars until well combined.
Add the egg, vanilla extract, and molasses to the butter mixture, mixing until smooth.
In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
