14–15 oz canned or leftover cooked salmon, well-drained and flaked
2 tablespoons olive oil, divided
2 tablespoons unsalted butter, divided
1 medium yellow onion, finely diced (about 1 cup)
½ red bell pepper, seeded and diced
½ cup Panko bread crumbs
1 large egg, lightly beaten
2 tablespoons mayonnaise
1 teaspoon Worcestershire sauce
1 teaspoon garlic salt (or ½ teaspoon fine sea salt and ¼ teaspoon garlic powder)
¼ teaspoon freshly ground black pepper
¼ cup fresh parsley, finely minced
Sauté Vegetables: In a medium skillet, heat 1 tablespoon olive oil and 1 tablespoon butter over medium heat. Add the diced onion and red bell pepper, sautéing until golden and softened, about 7–9 minutes. Remove from heat and set aside.
Prepare Salmon Mixture: In a large mixing bowl, combine the flaked salmon, sautéed onion and bell pepper, Panko bread crumbs, beaten egg, mayonnaise, Worcestershire sauce, garlic salt, black pepper, and chopped parsley. Stir until well combined.
Form Patties: Using a heaping tablespoon of the mixture, form into patties approximately 2 inches wide and ⅓ to ½ inch thick.
