Ingredients:
1 1/2 cups strawberries, hulled and sliced
1 large cucumber, thinly sliced
1/4 small red onion, thinly sliced

2 tablespoons fresh mint or basil, chopped
For the Dressing:
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1 teaspoon honey (optional)

Directions:
In a large mixing bowl, combine sliced strawberries, cucumber, and red onion.
