Ingredients:
For the Salad:
1/2 pound elbow macaroni
1/2 cup red bell pepper, finely diced
1/2 cup celery, finely diced
1/4 cup red onion, finely diced
1/4 cup sweet pickle relish
2 hard-boiled eggs, chopped
For the Dressing:
1 cup mayonnaise
1 tablespoon apple cider vinegar
2 teaspoons Dijon mustard
1 teaspoon sugar
Salt and black pepper, to taste
Directions:
Cook the macaroni according to package instructions. Drain and rinse under cold water. Set aside to cool.
In a large bowl, combine the cooked macaroni, bell pepper, celery, red onion, relish, and chopped eggs.
In a separate bowl, whisk together mayonnaise, vinegar, mustard, sugar, salt, and pepper until smooth.
Pour the dressing over the salad and toss until everything is well coated.
