Moroccan Honey and Almond Cigars, or Cigares aux Amandes, are a beloved North African pastry that beautifully marries the crunch of phyllo dough with a fragrant almond filling. These treats are often enjoyed during special occasions and festive gatherings, offering a delightful contrast between the crisp exterior and the sweet, nutty interior. Dipped in honey and infused with orange blossom water, they provide a taste experience that is both rich and aromatic. Whether served with mint tea or as part of a dessert platter, these cigars are sure to impress.
For the Almond Filling:
1 cup blanched almonds (or walnuts/pistachios)
½ cup honey (or agave syrup for a vegan option)
1 teaspoon ground cinnamon
Optional: 1 tablespoon orange blossom water
For the Pastry:
1 package phyllo dough (thawed if frozen)
½ cup melted butter (or coconut oil for a dairy-free version)
Optional: 1 egg white (for sealing)
For the Honey Glaze:
½ cup honey
Optional: 1 tablespoon orange blossom water
Prepare the Almond Filling:
Toast the almonds at 350°F (175°C) for about 10 minutes until golden and fragrant.
Once cooled, finely chop the almonds.
In a bowl, mix the chopped almonds with honey and cinnamon until well combined.
If desired, add orange blossom water for added fragrance.
Assemble the Cigars:
Lay a sheet of phyllo dough on a clean surface and brush lightly with melted butter.
Place another sheet on top and brush again.
At one end, place a small amount of the almond mixture, forming a line.
Fold in the sides and roll tightly into a cigar shape.
Seal the edge with a bit of melted butter or egg white.
Repeat with the remaining sheets and filling.
Bake the Cigars:
Preheat the oven to 375°F (190°C).
Place the cigars on a baking sheet lined with parchment paper.
Brush the tops with more melted butter.
Bake for 20-25 minutes, or until golden brown and crisp.
Prepare the Honey Glaze:
While the cigars are baking, heat the honey in a small saucepan until it becomes liquid.
If desired, add orange blossom water to the honey for additional flavor.
Finish and Serve:
Once baked, remove the cigars from the oven and immediately dip them into the warm honey glaze, ensuring they are well coated.
Place them on a cooling rack or parchment paper to set.
Allow to cool before serving.
