1½ cups chocolate whey protein powder
¾ cup almond flour
¼ cup unsweetened cocoa powder
¼ cup oat flour
¼ tsp kosher or sea salt
10 pitted Medjool dates
¼ cup creamy almond butter
2 Tbsp ground flaxseed
2 Tbsp chia seeds
1¼ tsp peppermint extract (plus ¼ tsp for drizzle)
~½ cup old-fashioned rolled oats
For the mint drizzle:
¼ cup white chocolate chips
½ tsp olive oil
¼ tsp peppermint extract
Green food coloring (optional)
In a food processor, combine protein powder, almond flour, cocoa powder, oat flour, and salt. Pulse until mixed.
Add dates, almond butter, flaxseed, chia seeds, and 1¼ tsp peppermint extract; pulse again until mixture resembles coarse sand.
