1 cup sugar
½ cup unsalted butter
¼ cup heavy cream
1 teaspoon vanilla extract
½ cup pecans, chopped
½ cup dried cranberries
2 cups rolled oats
½ teaspoon salt
Lightly prepare a baking sheet with parchment paper.
In a saucepan, combine sugar, butter, and heavy cream. Heat over medium, stirring until the butter melts and the mixture comes to a gentle boil.
Continue to stir and let the mixture bubble for about 2–3 minutes until it thickens slightly and takes on a light caramel color.
Remove from heat and stir in vanilla extract and salt.
Quickly fold in chopped pecans and dried cranberries until well combined.
Add rolled oats and stir until everything is coated in the praline mixture.
Drop spoonfuls of the mixture onto the prepared baking sheet.
Allow cookies to set at room temperature for about 30–40 minutes, or refrigerate to speed up setting.
Once firm, enjoy immediately or store in an airtight container.
