1 ¾ cups whole milk
1 ¾ cups heavy cream
⅔ cup caster sugar
15 grams (approximately 2 teaspoons) instant coffee granules
7 grams (approximately 2 teaspoons) powdered gelatin
1 tablespoon cold water
Pinch of salt

Prepare the Gelatin: In a small bowl, sprinkle the powdered gelatin over the cold water. Let it sit for about 5 minutes to bloom.
