½ cup (1 stick) butter (salted or unsalted)
¾ cup brown sugar
2 Tbsp granulated sugar
1 large egg
2 tsp vanilla extract
1¼ cups all-purpose flour
½ cup Dutch-process cocoa powder
½ tsp baking soda
¼ tsp salt
Preheat & prep: Preheat oven to 350 °F (177 °C). Line a baking sheet with parchment paper.
Cream sugars & butter: In a large bowl, use a mixer to cream the butter, brown sugar, and granulated sugar until light and fluffy.
Add egg & vanilla: Mix in the egg and vanilla until well combined.
Combine dry ingredients: Add flour, cocoa powder, baking soda, and salt. Mix until just combined.
Portion dough: Scoop 8 large dough balls onto the prepared sheet (about 2 – 3 Tbsp each), flatten slightly, and top with extra chips.
Bake: Bake 10 minutes until tops are set, edges crisp.
Rest: Let cookies cool on the baking sheet for 10 minutes before transferring to a wire rack.
