Slow Cooker Chicken Fajitas offer a convenient and flavorful twist on a classic Tex-Mex dish. By utilizing a slow cooker, this recipe allows the chicken and vegetables to cook together, melding spices and creating tender, juicy chicken without the need for marinating or sautéing. The combination of bell peppers, onions, and a blend of spices infuses the dish with vibrant flavors, making it a perfect choice for busy weeknights or meal prepping. Ingredients:
2 lbs boneless skinless chicken breasts
1 (14.5 oz) can petite diced tomatoes with green chilies
3 bell peppers (preferably 1 red, 1 yellow, and 1 green), cored and sliced
1 large yellow onion, halved and sliced
4 cloves garlic, minced
2 ½ tsp chili powder
2 tsp ground cumin
1 tsp paprika
¾ tsp ground coriander (or oregano as a substitute)
1 tsp salt
¾ tsp black pepper
2 tbsp fresh lime juice
1 tbsp honey (optional)
12 (6-inch) flour tortillas
Optional toppings: sour cream, salsa, guacamole, sliced avocados, shredded Mexican cheese, chopped cilantro
Directions:
Place half of the diced tomatoes, sliced bell peppers, sliced onions, and minced garlic into the bottom of a 6 or 7-quart slow cooker.
Lay the chicken breasts on top of the vegetable mixture.
In a small bowl, combine chili powder, cumin, paprika, coriander, salt, and black pepper. Sprinkle half of this seasoning mixture over the chicken breasts, then flip the chicken and sprinkle the remaining seasoning on the other side.
Top the seasoned chicken with the remaining diced tomatoes, bell peppers, onions, and garlic.
Cover and cook on HIGH for 2 to 3 hours or on LOW for 4 to 6 hours, until the chicken is fully cooked and the vegetables are tender.
Remove the chicken from the slow cooker and slice or shred it as desired.
In a small bowl, whisk together lime juice and honey. Add this mixture to the slow cooker along with the sliced or shredded chicken. Gently toss to combine.
Serve the fajita mixture in warmed tortillas with optional toppings such as sour cream, salsa, guacamole, sliced avocados, shredded Mexican cheese, and chopped cilantro.
