1 large boneless, skinless chicken breast
½ cup all-purpose flour
½ tsp garlic powder
Salt and black pepper, to taste
1 large egg
2 Tbsp milk
Canola or peanut oil, for frying
⅓ cup sweet chili sauce
Garnishes:
1 carrot, julienned
Fresh cilantro, chopped
Sesame seeds
Prep: Cut chicken breast into bite-sized pieces.
Coat chicken: In one shallow bowl, mix flour, garlic powder, salt, and pepper. In another, whisk egg and milk, seasoning with salt and pepper. Dredge chicken first in the flour mixture, then the egg mixture, then again in flour for a double coating.
Heat oil: Pour 1–2 inches of oil into a deep skillet. Heat to about 350 °F (175 °C).
Fry: Fry coated chicken in batches for about 3–4 minutes per side, until golden brown and cooked through. Drain on paper towels and lightly season with salt.
Coat in sauce: Transfer fried chicken to a large bowl and toss with sweet chili sauce until well coated.
Garnish & serve: Top with julienned carrot, chopped cilantro, and sesame seeds. Serve immediately while crispy.
