For the Whipped Feta:
8 oz (225 g) crumbled feta cheese
4 oz (115 g) cream cheese, softened
1–2 tbsp olive oil
1 tbsp lemon juice
Freshly ground black pepper, to taste
For the Roasted Strawberries:
1 pint (2 cups) fresh strawberries, hulled and halved
1 tbsp balsamic vinegar
1 tbsp honey
Freshly ground black pepper, to taste
Garnishes:
Fresh basil or mint leaves, chopped
Extra olive oil for drizzling
Black sesame seeds (optional)
Prepare the Roasted Strawberries:
Preheat oven to 375 °F (190 °C).
In a bowl, toss strawberries with balsamic vinegar, honey, and a pinch of black pepper.
Spread on a baking sheet lined with parchment. Roast for 15–20 minutes until soft and slightly caramelized. Cool to room temperature.
Make the Whipped Feta:
In a food processor, blend crumbled feta, softened cream cheese, olive oil, lemon juice, and black pepper until smooth. Add more olive oil if it’s too thick.
Assemble:
Spread whipped feta in a serving dish and create a swirl with the back of a spoon.
Spoon roasted strawberries over top.
Drizzle with extra olive oil, garnish with chopped basil or mint, and sprinkle black sesame seeds if desired.
