1 pre-made 9-inch deep-dish pie crust
1 lb fresh shrimp, peeled, deveined, and coarsely chopped
1/2 cup chive-and-onion cream cheese spread
4 large eggs
1/2 cup shredded pepper Jack cheese
1 tablespoon butter
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
3/4 cup half-and-half
Chopped parsley, for garnish (optional)
Preheat the Oven: Place a cookie sheet on the middle rack of the oven. Preheat the oven to 375°F (190°C).
Prepare the Pie Crust: Let the pie crust thaw for 10 to 20 minutes. Prick the bottom and sides thoroughly with a fork. Bake on the cookie sheet for 9 to 11 minutes or until very light golden brown. Remove from the oven and set aside.
Cook the Shrimp: In a medium skillet, melt the butter over medium-high heat. Add the chopped shrimp and cook until just barely done, about 2 to 3 minutes. Remove from heat and set aside to cool slightly.
Prepare the Filling: In a medium bowl, beat the chive-and-onion cream cheese spread until creamy. Add the eggs, one at a time, beating well after each addition. Stir in the cooked shrimp, shredded pepper Jack cheese, salt, and black pepper.
Assemble the Pie: Pour the shrimp mixture into the pre-baked pie crust, spreading evenly.
Bake the Pie: Bake at 350°F (175°C) for 30 to 35 minutes, or until the center is set and the top is lightly golden.
Cool and Serve: Remove the pie from the oven and let it stand for 15 minutes before slicing. Garnish with chopped parsley, if desired.
