1 lb lean ground beef
10 Goya empanada dough discs
½ red bell pepper, finely chopped
½ green bell pepper, finely chopped
¼ cup yellow onion, finely chopped
1 tsp cumin
1 tsp chili powder
¼ tsp black pepper
¼ tsp salt
1 tsp minced garlic
Olive oil for cooking
Oil for frying (if frying)
Optional: 1 tbsp tomato paste for added richness
Prepare the Filling: In a large skillet, heat a drizzle of olive oil over medium heat. Add the ground beef, breaking it apart with a wooden spoon. Cook until browned and cooked through.
