2 fresh croissants (store-bought or day-old)
1 cup (240 ml) heavy or double cream, cold
½ teaspoon granulated sugar
1½ tablespoons pistachio paste (store-bought or homemade)
3 tablespoons chopped pistachios
3 tablespoons extra pistachio paste for topping
Chop the pistachios and set aside.
Whip the cold heavy cream with the sugar for about 3 minutes until soft peaks form.
Add the pistachio paste to the whipped cream and whip another 2 minutes until stiff peaks form.
Use a sharp knife to slice each croissant in half horizontally.
Spoon or pipe pistachio cream into the bottom half of each croissant, then replace the top.
Add a dollop of additional pistachio paste on top, then sprinkle with chopped pistachios. If the paste is too thick, mix in a drop of oil to loosen.
Serve immediately—these indulgent croissants are best enjoyed right away.
