1 refrigerated or homemade pie crust
4 large egg yolks
2 ½ cups (600 ml) heavy whipping cream
⅔ cup (150 g) light brown sugar, packed
⅓ cup (45 g) cornstarch (corn flour)
½ tsp salt
½ cup (120 ml) honey
2 tsp vanilla extract
Flaky sea salt, for sprinkling
Preheat oven to 375°F (190°C). Fit pie crust into a deep 9‑inch pan and refrigerate.
In a saucepan, whisk together cream, brown sugar, cornstarch, and salt. Heat gently, stirring frequently, until the mixture thickens and boils.
Temper the egg yolks by whisking a small amount of the hot cream mixture into them. Gradually whisk in the rest to avoid curdling.
Stir in honey and vanilla extract until well combined.
Pour filling into chilled crust. Bake for 40–45 minutes, until edges set and top bubbles and lightly browns. Center should remain slightly jiggly.
Cool to room temperature, then refrigerate until firm (at least 2 hours). Before serving, sprinkle with flaky sea salt for garnish.
