Inspired by the NYC O’Bagel Bee Sting, this Everything Bagel Breakfast Sandwich is a flavorful and satisfying meal. It combines scrambled eggs, cheddar cheese, crispy bacon, scallion cream cheese, and a drizzle of hot honey, all nestled between a toasted everything bagel. Perfect for a hearty breakfast or brunch, this sandwich offers a delightful balance of savory and sweet flavors.
For the Scallion Cream Cheese:
4 tablespoons sliced green onions (about 2 green onions)
4 tablespoons whipped cream cheese
For the Bagel Sandwich:
1 everything bagel, toasted
2 large eggs
2 slices American cheese (or cheese of choice)
2 slices bacon, cooked and broken in half
1 tablespoon hot honey (or regular honey)
Prepare the Scallion Cream Cheese: In a medium bowl, combine the whipped cream cheese and sliced green onions until evenly distributed. Set aside.
Cook the Eggs: Heat a large non-stick skillet over medium heat and lightly spray with olive oil. Pour in the beaten eggs and let them cook in a flat layer until the edges start to peel up. Place the two slices of cheese in the center of the eggs and fold the edges over to create a square with the cheese in the middle.
Assemble the Sandwich: Transfer the egg and cheese square to the bottom half of the toasted bagel. Top with the broken bacon slices and drizzle with hot honey.
