3 lb Yukon Gold potatoes, cut into ~2‑inch pieces
3 Tbsp olive oil
½ tsp garlic powder
Salt & freshly cracked black pepper, to taste
½ cup sour cream
½ cup mayonnaise
¼ cup finely chopped scallions (reserve 1 Tbsp for garnish)
2 Tbsp finely chopped fresh dill (reserve 1 Tbsp for garnish)
2 Tbsp finely chopped fresh parsley (reserve 1 Tbsp for garnish)
1 Tbsp Dijon mustard
1 Tbsp lemon juice
In a large pot, cover potato pieces with cold water and 1 Tbsp salt. Bring to a boil, then simmer until fork-tender, about 12–16 minutes. Drain and cool slightly.
Preheat the oven to 400 °F and line a baking sheet with foil. Toss the boiled potatoes in olive oil, garlic powder, salt, and pepper until evenly coated.
Spread potatoes in a single layer on the baking sheet. Roast for about 30 minutes, turning halfway, until deeply golden and crisp.
While potatoes roast, whisk together sour cream, mayonnaise, Dijon mustard, lemon juice, chopped scallions (except reserved), dill (except reserved), and parsley (except reserved). Season to taste with salt and pepper.
