Ingredients:
For the Candied Walnuts:
1/2 cup walnuts
1/2 cup water
1/2 cup sugar
For the Shrimp:
1 pound large shrimp, peeled and deveined
2 egg whites
1/2 cup cornstarch
Vegetable oil, for frying
For the Sauce:
1/4 cup mayonnaise
2 tablespoons honey
1 tablespoon sweetened condensed milk
1 teaspoon lemon juice (optional, for a slight tang)
Directions:
Candy the Walnuts:
In a small saucepan, bring the water and sugar to a boil.
Add the walnuts and boil for 2–3 minutes.
Remove the walnuts with a slotted spoon and place them on parchment paper to dry.
Prepare the Shrimp:
In a bowl, beat the egg whites until frothy.
Toss the shrimp in the egg whites, then coat each piece in cornstarch.
Heat vegetable oil in a deep pan over medium-high heat (about 350°F/175°C).
Fry the shrimp in batches for 2–3 minutes until golden and crispy. Drain on paper towels.
Make the Sauce:
In a large mixing bowl, whisk together mayonnaise, honey, sweetened condensed milk, and lemon juice (if using).
Add the fried shrimp and toss to coat evenly.
Assemble:
Gently fold in the candied walnuts.
Serve immediately, garnished with extra walnuts or green onions if desired.
