1 ½ cups uncooked sushi rice
2 cups water
3 tbsp rice vinegar
1 tbsp sugar
1 tsp salt
1 English cucumber, diced
1 avocado, sliced
1 cup imitation crab meat, shredded
2 sheets nori (seaweed), cut into small strips
1 tbsp sesame seeds
Soy sauce, for serving
Pickled ginger and wasabi (optional)
Spicy Mayo:
¼ cup mayonnaise
1–2 tsp Sriracha (adjust to spice level)
Unagi Sauce (optional):
2 tbsp soy sauce
2 tbsp mirin
1 tbsp sugar
Rinse the sushi rice under cold water until clear. Combine rice and water in a pot and bring to a boil. Reduce heat, cover, and simmer for 20 minutes. Let rest off heat for 10 minutes.
In a small bowl, mix rice vinegar, sugar, and salt. Gently fold into cooked rice. Let the rice cool to room temperature.
In a separate bowl, mix mayonnaise and Sriracha to make the spicy mayo.
For optional unagi sauce, simmer soy sauce, mirin, and sugar in a small saucepan until slightly thickened.
Assemble bowls: Start with a base of sushi rice, then top with cucumber, avocado, crab meat, and nori strips.
Drizzle with spicy mayo and unagi sauce. Sprinkle with sesame seeds. Serve with soy sauce, pickled ginger, and wasabi on the side if desired.
