16 oz. plain yogurt
1 medium cucumber, peeled, seeded and finely chopped
4 cloves garlic, minced
1 Tbsp. olive oil
1 Tbsp. lemon juice
1 Tbsp. finely minced mint
Kosher salt, to taste
Directions:
Place yogurt in fine mesh sieve, and place over large bowl. Refrigerate for 2 hours, letting liquid drain from yogurt.
Place thickened yogurt in a bowl and mix with the rest of ingredients. Refrigerate until ready to serve. Refrigerate any leftovers.
