1 lb. fresh green beans, ends trimmed and broken in half
1/2 medium red onion, coarsely chopped
1/4 cup + 1 Tbsp. olive oil, divided
Salt and pepper to taste
1 Tbsp. Dijon mustard
1 Tbsp. honey
2 tsp. apple cider vinegar
2 tsp. minced garlic
10 oz. grape tomatoes, halved
6-8 pieces of bacon, cooked and chopped
1/4 cup shredded Parmesan cheese
Directions:
Preheat oven to 425. In a large bowl, toss the green beans and onion with 1 Tbsp. olive oil and salt and pepper, to taste. Spread green beans and onions on a baking sheet. Roast for 12 minutes, stirring halfway through. Cool for 5 minutes.
Meanwhile, in a small mixing bowl, whisk together 1/4 cup olive oil, Dijon mustard, honey, vinegar, garlic, salt and pepper, to taste.
In a large bowl, combine green bean and onion mixture, tomatoes, bacon and dressing. Mix well. Cover and refrigerate for at least 30 minutes. Top with Parmesan cheese and when ready to serve.
