Serves 8
1 lb. dried green split peas
2 cups diced ham
2 carrots, chopped
1 onion, chopped
2 stalks of celery, chopped
2 cloves of garlic, minced
1 bay leaf
Salt and pepper to taste
6 cups of gluten free chicken broth
1/4 cup chopped fresh parsley (for garnish)
Directions:
Add the split peas to the slow cooker in a single layer, and top with layers of the ham, carrots, onion, celery and garlic. Add the bay leaf, salt and pepper to taste. Pour the chicken broth over the mixture (do not stir). Cover and set slow cooker on high. Cook until the split peas are falling apart, about 5-6 hours. Serve in bowls garnished with fresh parsley.
