2 medium acorn squash, with tops and bottoms cut off horizontally. Cut in half and remove seeds
olive oil
pepper
1 large onion, chopped
2 stalks celery, chopped
1 tsp. salt
1 tsp. pepper
1 tsp. rosemary
3 garlic cloves
1/2 pound bulk sausage, such as Jimmy Dean breakfast sausage
1 apple, cut into 1/2 cubes
2/3 cup gluten free breadcrumbs
1/2 cup shredded Parmesan cheese
Directions:
Preheat oven to 400 degrees. Place the prepared squash on a foil lined baking sheet or casserole dish. Drizzle small amount of olive oil across the squash, and season with salt and pepper. Place in oven and bake for 40 minutes.
While the squash is baking, saute the onion and celery in olive oil, along with 1 tsp. each of salt, pepper and rosemary. Mix until the vegetables are tender crisp. Add the garlic and saute about two minutes longer. Add the sausage and cook until browned. Add the apple cubes and mix. Add the breadcrumbs and the 1/2 cup of Parmesan cheese. Mix well and spoon meat mixture into the squash when it comes out of the oven. Sprinkle more Parmesan cheese over the top and bake for another 20 minutes.
