Crust:
1 cup brown rice flour
2 Tbsp. sugar
1 stick butter, softened
3/4 cup finely chopped walnuts.
Layer 1:
1-8 oz. pkg. cream cheese
¼ cup sugar
2 tablespoons milk
1 16 oz. container Cool Whip (only use about 1/4 for this layer)
Layer 2:
2 small pkgs. Instant pudding (Chocolate, Pistachio, Butterscotch or lemon)
3 ½ cups cold milk
Layer 3:
Spread desired amount of Cool Whip over the top
To make the crust, mix the ingredients together and press firmly into bottom of a 9x13 dish. Bake at 350 for about 15-20 minutes. All to cool thoroughly before putting on the next layer. Beat cream cheese, with other ¼ cup of sugar and milk until smooth. Fold in ½ of Cool Whip. Spread over the crust. Using the 3 ½ cups milk, prepare pudding as directed on the box. Pour over the cream cheese layer. Chill several hours in frig. Spread remaining Cool Whip over the top before serving.
