2 cups Gluten Free Bisquick
1 small vanilla instant pudding mix
1 cup sugar
1/8 cup oil
3 eggs
3 large overripe bananas
2 tsp. vanilla
2 Tbsp. Nutella
Mix the Bisquick, pudding mix, sugar, oil and eggs well. Add the remaining ingredients and mix. If batter is too thick, you can add up to 1/4 cup water.
Spray muffin cups. Pour batter into each cup about 2/3 full. Sprinkle some sugar on top of each muffin (optional). Bake at 350 for about 20 minutes. They also freeze well.
