2 cups cooked turkey or chicken, cut into bite sized pieces
6 oz. (1 ½ cup) UN-cooked egg noodles or spaghetti
1 tablespoon instant onion (in the spices area of a grocery store)
1 small jar chopped pimento
1 tsp. salt
¼ tsp. pepper
1 can (10 ½ oz.) cream of chicken soup
2 ½ cups chicken broth
1 small can of sliced mushrooms
½ cup grated Parmesan cheese
Grated Mozzarella cheese
Arrange meat in layer on bottom of a large pan, like a dutch oven type of pan. Add dry pasta in layer on top of meat. Mix onion, pimento, salt, pepper, soup, and broth in a bowl. Pour over the top of pasta, being careful to moisten all pieces. Place mushrooms over top and sprinkle with parmesan cheese. Cover and cook over medium to high heat until steam escapes. Immediately turn heat down and simmer for about 30 minutes with lid on. Pour into a 9x13 dish, sprinkle with the grated mozzarella cheese and bake until cheese is golden brown, maybe 20 minutes. Good served with green type of vegetable, a salad, applesauce, etc.
