One burpless (English) cucumber (~1 lb.) - they are the cucumbers that are wrapped in cellophane
1/2 tsp. salt
1/4 tsp. salt
1/2 tsp. sugar
1 tsp. vinegar
1 garlic (chopped)
1/4 tsp. sesame oil
Directions:
1. Lay cucumber flat on a chopping board
2. Smack it with the side of a butcher knife until the cucumber cracks.
3. Discard ends and chop remaining into bite size pieces.
4. Transfer the chopped cucumber to a clean bowl.
5. Sprinkle with 1/2 tsp. salt and mix well.
6. Set aside for about 20 minutes.
7. Drain excess liquid.
8. Add another 1/4 tsp. salt and the remaining ingredients.
9. Mix and serve.
