I usually double this recipe so that I can use the entire can of pumpkin and not waste it.
1 cup sugar
1 cup canned pumpkin
1/2 cup butter, softened
1 Tbsp. grated orange peel (optional)
2 cups flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
1/4 tsp. salt
Optional: 1/2 to 1 cup of either chocolate chips or raisins.
Mix moist ingredients. Mix in dry ingredients. Drop by spoonfuls on to a greased cookie sheet. Bake at 375 for 8 - 10 minutes.
Cream Cheese Frosting:
1 stick butter
1 box (or 1/2 of bagged) powdered sugar
1 tsp. vanilla
8 oz. cream cheese, softened
Beat butter and cream cheese until smooth. Add powdered sugar and mix well. Then add the vanilla. Mix well. Spread a little frosting on top of each cookie.
