4 1/2 pounds onions, sliced thinly
1/3 cup butter
1/4 cup sugar (optional)
Salt and pepper to taste
3 1/3 quarts gluten free beef broth
3 1/4 cups cooked wild rice
2 Tbsp. port wine
30 gluten free French baguette slices, lightly toasted
Directions:
Saute onions in butter, stirring frequently. If desired, sprinkle with sugar. Caramelize the onions until they brown, approximately 15 minutes. Season with salt and pepper.
Add half of the broth; simmer uncovered for 15 minutes. Add remaining broth; simmer another 25 minutes. Add wild rice; simmer for 5 minutes; remove from heat and stir in wine.
Top each serving with 3 baguette slices; sprinkle with cheese. Broil to melt cheese and serve immediately. Makes 10 servings.
