1 Tbs. Olive oil
1 ½ c. chopped onion
1 tsp. bottled minced garlic
1 c. green bell pepper, chopped
1 c. red bell pepper, chopped
2 ½ tsp. paprika
½ tsp. salt
½ tsp. dried oregano
½ tsp. ground red pepper
½ tsp. black pepper
1 c. uncooked Riceland White Long Rice
2 c. Progresso reduced sodium chicken broth
1 can (14.5 oz.) diced tomatoes, undrained
2 c. shredded cooked turkey
6 oz. Wellshire Farms andouille sausage, chopped
2 Tbs. green onions, sliced
Directions
Heat oil in a large Dutch oven over medium-high heat. Add chopped onion and garlic, sauté 6 minutes or until lightly browned. Stir in bell peppers and next 5 ingredients; sauté 1 minute. Add rice, sauté 1 minute. Stir in broth and tomatoes; bring to a boil. Cover, reduce heat, and simmer 15 minutes. Add turkey and sausage, cover and cook 5 minutes. Sprinkle with green onions.
