3 - 4 boneless/skinless chicken breasts
Black pepper, to taste
1 cup cornstarch
3 eggs, beaten
1/4 cup oil
Sauce:
1/2 cup brown sugar
4 Tbsp. ketchup
1/2 cup white vinegar
1 Tbsp. soy sauce
1 tsp. minced fresh garlic
Directions:
Preheat oven to 375 degrees.
Rinse chicken breasts and cut into cubes.
Season with pepper to taste.
Heat oil in a large skillet to medium high.
Dip chicken into the cornstarch to coat, then dip into the eggs.
Fry until browned on all sides but not cooked through.
Drain on paper towels.
Place the chicken in a greased 9x13 casserole dish.
Mix the sauce ingredients in a bowl with a whisk and then pour over the chicken.
Bake for 30-40 minutes.
