from Barbara Jackson - Makes a large skillet - feeds ~6-8 people
2 cups of rice
4 cups of chicken broth or 1/2 broth 1/2 water
4 Tbs olive oil - enough to coat the bottom of the skillet
3 boneless/skinless chicken breast
garlic powder ~ to taste - about 2 teaspoons
salt ~ to taste, about 1 teaspoon
vegetables - mixed frozen (broccoli, carrots, bell peppers (yellow & red)
1 small onion - diced
cut chicken into bite size pieces and put in skillet with olive oil
cook chicken till about 1/2 done
add rice and vegetables and stir constantly until chicken is cooked completely and vegetables become tender.
add the garlic powder and salt - stir and fry about 2 more minutes
add chicken broth/water - reduce heat and simmer until water/broth is absorbed ~20 more minutes.
