1 3/4 cup gluten free flour mix
1/2 tsp. xanthan gum
2 cups sugar
3/4 cup cocoa
1 1/2 tsp. baking soda
1 1/2 tsp. baking powder
1 tsp. salt
2 eggs
1 cup milk, soured with 1 tsp. vinegar
1/2 cup oil
2 tsp. vanilla
1 cup boiling water
Directions:
Combine dry ingredients in large bowl and mix. Beat eggs well and add to dry ingredients with milk and oil. Add remaining ingredients and mix. Batter will be thin.
Pour into a greased and floured 9 x 13 pan. Bake at 350 degrees for oblong, 25-30 minutes for 9" rounds and 15-20 minutes for cupcakes.
