3 Tbsp. butter
3/4 cup each finely chopped onion and scallion (scallions are optional)
1/2 cup finely chopped carrots
1/4 cup finely chopped celery
1/4 cup chopped green pepper
1/4 cup chopped red pepper
2 tsp. minced garlic
3 eggs, well beaten
1/2 cup ketchup
1/2 cup milk
1 tsp. ground cumin
1/2 tsp. ground nutmeg
1/4 tsp. cayenne pepper
Salt and pepper to taste
12 oz. ground turkey sausage
2 lbs. ground turkey
1/4 cup bread crumbs (use gluten free bread crumbs to make this gluten free)
Melt butter in skillet. Add onion, scallions, carrots, celery, bell peppers, and garlic. Cook, stirring often, until moisture from vegetables has evaporated, about 10 minutes. Set aside to cool. In mixing bowl, beat together the eggs, ketchup, milk, and seasonings. Add meat and bread crumbs. Then add the vegetables and mix thoroughly for about five minutes. Preheat oven to 350. Form meat mixture inito a loaf on a baking sheet. Bake until cooked through about one hour. Let rest about twenty minutes before serving.
