3 cups mashed sweet potatoes (or 2 large cans of canned yams)
1/2 stick butter
2 eggs
1 cup sugar
1 tbsp. vanilla
pinch of salt
1 cup chopped nuts (pecans, walnuts)
1 cup brown sugar
1/2 cup white rice flour
3/4 cup cold butter
Mash together potatoes, 1/2 stick butter, eggs, cup of sugar, vanilla and salt. Pour into a casserole dish. In a bowl, mix in white rice flour and brown sugar, Cut in the butter until consistency resembles crumbles. Stir in nuts and then pour over top of casserole. Bake at 350 for 30 - 40 minutes.
