Ingredients
6 Tbs. olive oil
5 cloves garlic, minced
2 tsp. basil, crushed
2 tsp. thyme, crushed
2 tsp. rosemary, crushed
2 tsp. salt
1 tsp. Italian seasoning
1 tsp. fresh ground black pepper
1 (3-4 lb.) pork loin roast
2 medium onions, quartered
Directions
In a small bowl, mix oil, garlic and seasonings; rub over roast. Arrange onions on the bottom of a 13x9 inch baking pan. Place roast on top of onions, fat side up. Refrigerate, covered, 1 hour. Preheat oven to 475° F. Roast Pork loin 20 minutes, uncovered. Reduce oven temperature to 325° F. Cover with lid or foil and roast an additional 2 hours or until internal temperature reaches145° F. Remove roast from oven and let stand 15 minutes before slicing. (Serves: 10-12)
