Pork butt roast
¼ cup taco seasoning
¼ cup salt
¼ cup chili powder
Mix the dry ingredients together in a large bowl. Dredge the meat with the rub mixture until completely coated.
In a large pan or stock pot, cover bottom with olive oil. Heat over medium high heat until very hot. Put the meat in the pan and sear all sides.
Remove from the pan and place in a crock pot. Place a couple of “pats” of butter on the top of the meat. You do not need to add any water, as the meat will create its own juices. Cook on low for 6 – 8 hours.
Remove from crock pot and pull. Put back in the crock pot to keep warm on low.
Serve with any or all of the following items:
Sautéed green peppers and onions
Guacamole
Diced tomatoes
Green onions
Shredded cheese
Sour cream
Salsa
Chopped cilantro
Serve on warm tortillas and enjoy!!!
