3 eggs
2 1/4 cups milk
1/2 cup sugar
1 tsp. vanilla
1/4 tsp. salt
Sprinkle of cinnamon or nutmeg
Beat eggs lightly. Add other ingredients, sprinkle with cinnamon or nutmeg. Put in a gluten free pie shell and bake 10 minutes at 450 and then 30 minutes at 325. (You can heat the milk beforehand so it doesn't take quite as long to bake.)
