2 tbsp. vegetable oil
1/2 cup chopped carrots
1/2 cup chopped celery
1/2 cup chopped onion
2 cans 10 oz. ea. Rotel Chucky Diced Tomatoes and Green Chilies
3 cans 15 oz. ea. black beans, undrained
1 can 11 oz. Mexican Style corn
1/4 cup fresh minced cilantro
Heat oil in deep pan over medium heat; add carrots, celery, and onion. Cook about 15 minutes or until tender. Add remaining ingredients EXCEPT cilantro. Heat to a boil; reduce heat and simmer 20 minutes. Blend in cilantro; serve. Makes 4-6 servings. Good with cornbread!
