1 cup fresh or frozen cranberries
1 cup sugar (I use Splenda)
1 pkg. lemon jello
1 cup hot water
1 cup pineapple syrup
1 cup crushed pineapple - well drained, saving the juice / syrup
1 cup chopped walnuts
1 cup chopped celery
Combine cranberries and sugar, set aside. Dissolve jello in hot water, add syrup. Chill unitl partially set. Remove from refrigerator, add the cranberry mixture and all remaining ingredients. Chill in shallow dish until firm.
NOTE: I usually double this recipe and use a 9x13 dish. If you don't double recipe, use an 8x8 dish.
