Sweet Potato with Cranberry Maple Glaze

4 lbs. whole sweet potatoes, peeled

1 tsp. salt

1 cup maple syrup

1 1/2 cup fresh cranberries

3 Tbsp. butter

1/2 tsp. salt

Put the peeled sweet potatoes and 1 tsp. salt in stock pot and bring to a boil. Cover and simmer until fork tender. Drain and then cool. In the same stock pot, boil one cup of maple syrup until reduced to about 1/2 cup. Stir continuously. When reduced, stir in cranberries, butter and 1/2 tsp. of salt. Cook until the cranberries pop. Meanwhile, cut sweet potatoes into slices - rings - and lay in a 9x13 casserole dish. Pour cranberry topping over the top of the sweet potatoes and bake uncovered for 20 minutes at 400 degrees.
