1 1/2 sticks butter (10 Tbsp.)
1 1/4 cups sugar
3/4 cup unsweetened cocoa
1/4 tsp. salt
2 tsp. water
1 tsp. vanilla
2 eggs
1/3 cup plus 1 Tbsp. gluten free flour mix
1/2 cup walnut pieces (optional)
Directions:
Preheat oven to 325. In a small bowl, mix the sugar, cocoa and salt together and set aside. Melt the butter in a medium saucepan over medium heat. After about 4-5 minutes, you will see the butter getting darker and "browning." Make sure you stir occasionally so it doesn't burn. Once the butter reaches a deep brown color, remove from the heat. To the butte, add the sugar, coca and salt. Add in the vanilla and 2 tsp. of water. Stir the mixture well. The mix will be a little grainy at this point. Let it cool for about 5 minutes before adding the eggs, one at a time. After mixing in the eggs, the batter will become smooth and shiny. Add in the gluten free flour mix and beat vigorously for about 60-70 strokes. Stir in the walnuts. Pour batter into a greased 8x8 dish and bake 20-25 minutes or until toothpick inserted in the middle comes out clean.
