Boneless, skinless chicken breasts
Ricotta cheese
Salt
Pepper
Parsley
Bacon - enough to cover the number of chicken breasts
Directions:
Take each chicken breast and use a meat mallet to tenderize the meat.
Rub some ricotta cheese over the top of the meat.
Sprinkle salt and pepper to taste. Sprinkle parsley over the surface.
Roll the meat up like a pinwheel and wrap with a slice or two of bacon, to cover the surface of the chicken.
Bake at 400 for 45 minutes.
