2 (3/4 lb.) pork tenderloin
1/4 cup honey
1/4 cup gluten free soy sauce
1/4 cup gluten free oyster sauce or gluten free Hoisin sauce (found in the Asian section)
2 Tbsp. brown sugar
1 Tbsp. plus 1 tsp. minced fresh ginger root
1 Tbsp. minced garlic
1 Tbsp. ketchup
1/4 tsp. onion powder
1/4 tsp. ground red pepper
1/4 tsp. ground cinnamon
Fresh parsley sprigs (optional)
Directions:
Place tenderloins in an 11x7x1 1/2 inch baking dish. Combine honey and next 9 ingredients, stirring well; pour over tenderloins. Cover and marinate in refrigerator 8 hours, turning occasionally.
Remove tenderloins from marinade, reserving marinade. Grill tenderloins over medium-hot coals 25-35 minutes, turning often and basting with reserved marinade. Pork is done when the meat thermometer inserted into thickest portion of tenderloin reaches 160 degrees.
To serve, slice tenderloins thinly, and arrange on a serving platter. Garnish with fresh parsley, if desired. Serves 6.
